Ay & Leuvrigny
Although the family’s vines are sufficient for supplying the quantity needed to produce Legras & Haas wines, the family is nonetheless curious of the complementarities offered by the region, on the condition that this supply is used exclusively to improve quality year after year. The proportion of grapes sourced from other estates is generally about 25% for Intuition and Rosé and between 40 and 50% for the cuvée Exigence.
For the past 27 years the family has enjoyed a close partnership with a winemaker from LEUVRIGNY, a small village on the left bank of the Marne Valley. His pinot meunier are always grown to the highest quality standard and with an unfaltering attentiveness to the perfect ripeness.
In the event of an outstanding vintage in Aÿ, Legras & Haas cooperates with another producer and exchanges a proportion of their wines in return for high quality Aÿ Pinots. A very small amount of wine yet a defining part within Exigence’s blend. These Aÿ wines enable us to craft a beautiful and well structured champagne with unrivaled potential for bottle age.
